canning

I remember canning with Kara several years ago. I thought the peaches were delicious and so I have wanted to can since then. Last summer we got some jars at a garage sale and we decided to use them this year. Matt talks to everyone at Costco and he was talking to someone who wanted boxes. The guy (actually a professor at BYU) wanted them for his orchard. He invited Matt to come pick some. Then he left. Matt, knowing that I really wanted to can decided that he better go see if the guy was serious and so he quickly took his break and went and got the guy’s phone number. Keith Wilson
Funny enough, we found out that he is also the guy who started Wilson’s Diamonds. Cool huh? He was really nice. He showed us how to pick the ripe ones. You push on the crease in the peach and if it is soft then the peach is good and ripe. We picked a couple boxes, helped him  pick some and then picked some of his apples as well. They were Galas but he had a variety that weren’t ripe yet. It was really neat to do this. I would love to have fruit trees some day!

He even offered for us to go and blanch the peaches at his house. That was really nice because he and his wife knew what they were doing and had better supplies then us.
Here is what you do.
1. Wash the peaches
2. Boil them

3. Stick them in cold water.

4. Peel off their skins, cut them in half and then put them in a bowl

5.Put the baby to bed.

6.  Make Sugar water. They did 9 cups of sugar for every 12 cups of water. So I guess 3/4 ratio.
7. Place peaches in facing down, then add the sugar water leaving a half an inch at the top.

8. Clean any peach excess off the rims, and place the lid on.

9. Boil water

10. Place jars in at cooler heat and then gradually come up to boil.
11. Boil for 30 minutes and then remove.

12. Let them sit for 12 hours to set.

It was really fun. Poor Matt though had to run to the store and get more jars because we had so many peaches. It was awesome. We canned 33 jars but one broke in the middle and so we ended up with 32 jars of peaches. So excited to eat them! Here is us trying them out!

Next time I think we will try some sugar free ones and probably put less sugar in the other ones. We wanted to drink the juice in the bottom but it was SOOOOOOOO sugary!

Did you tell him your parents and sister got their ring at his place? And we got ours probably right when they were starting up...29 years ago.

  2. I never put sugar in mine although my neighbor cans them in white grape juice instead of sugar and water. They are better with sugar :) That was nice of that guy.
